Awesome, Yummy, Healthy Muffins!

Thsi morning my oldest told me he was "sick of eggs" so I dusted off an old muffin recipe Id tried before and made it our own. They are delicious - and have no refined sugar and are dairy, soy and egg-free! Try them out and let me know what you think :)

1/4 cup Coconut Oil
1/2 cup Honey (or molasses/agave/etc)
1 cup unsweetened organic applesauce
1 tsp real vanilla extract

1 1/2 cup Whole wheat flour (i used freshly ground organic whole wheat hard white berries - yum!)
1/2 tsp aluminum-free Baking Soda
1 1/2 tsp aluminum-free Baking Powder
1/2 tsp salt
1 tsp cinnamon
pinch nutmeg or cloves (opt)

3/4 cup Organic raisins

Combine wet ingredients in one bowl
Combine dry ingredients in seperate bowl and whisk together.
Add wet ingredients until moistened. Add raisins and stir gently.

Bake 375 for 18-20 mins in greased muffin pans (i used coconut oil to grease my silicon muffin pan)

Delicious! :)

These turned out pretty good! We used agave and I think I could have used less than 1/2 cup and they still would have yummy. Makes 12 regular sized muffins.

Rach, do you use a non-stick pan? My muffin pans are the one of the last things for me to replace in my kitchen. I was thinking about getting stoneware but I hate cleaning it. I don't know how I feel about some of the silicon stuff.

Stacy - agave is much sweeter than sugar so you can definitely use less. reminds me - I need to order more!

Everything Ive researched about silicon says its safe. It doesnt leach into your food. I LOVE my silicon muffin pan - it has nonstick on top so its not flimsy but the food only touches the silicon. Ive used silicon cake and bread pans for years too.

(and if you have any tips to keep me out of the muffins, I've had three in three hours. Yum!)

I had printed this out when you posted it but finally got around to making them with my two DDs today. I planned to use molasses as the sweetener but ran out so had to use mostly brown rice syrup. Anyway, thanks for the recipe. They turned out great and the girls were so happy to be able to lick the bowl (no eggs!).

I've never tried agave nectar but one of these days I'll get some to use.
